Make sure the water is lukewarm, not too hot, as hot water can kill the yeast. Lukewarm water helps activate the yeast for a good rise.
Allow the dough to rise fully. Check after 1 hour to see if it has doubled before proceeding. A warm, draft-free environment will help.
Cover the dough with plastic wrap or a damp cloth while it rises to prevent it from drying out.
Let the chicken marinate for a few hours or even overnight if possible. This allows the spices to deeply penetrate the chicken, resulting in a more flavorful dish.
Watch the buns while baking. Ovens can vary, so adjust the time as needed to avoid over-browning.
Soaking the sliced potatoes in cold water for a few minutes and drying them well helps remove excess starch, resulting in crispier fries.
Stappenplan
In a large bowl, mix the flour, yeast, sugar, salt, salad seasoning, sunflower oil, and lukewarm water. Knead for 10-12 minutes until smooth.
Cover the dough and let it rise in a warm spot for 1 hour or until it has doubled in size.
For the tomato sauce, mix the tomato paste, water, and salad seasoning in a bowl. Set aside.
Wash and cut the chicken thighs into small strips and place in a bowl. Add the chicken seasoning, ras el kouzina, cinnamon powder, red bell pepper powder, garlic powder, cumin powder, cayenne pepper powder, salad seasoning, and sunflower oil. Mix well and set aside.
Divide the dough into 8 pieces (80g each) and shape into balls.
Roll out each piece of dough on a floured surface into a circle, then fold it over.
Place the dough on a baking tray lined with parchment paper and repeat.
Brush the dough with the tomato sauce.
Let the dough rise for another 30 minutes or until doubled in size. Sprinkle some grated cheese on top.
Preheat the oven to 200°C (390°F) and bake for 12-18 minutes or until golden brown. Keep a close eye, as baking times may vary. Cover the buns with a clean cloth immediately after baking to keep them soft.
Peel the potatoes and slice them into fries. Add salt and mix well. Heat a layer of sunflower oil in a pan and fry the fries for 15 minutes until golden brown. Drain on paper towels.
Cook the chicken in a pan over medium heat for 5-6 minutes until done.
Open the buns, fill them with the chicken, fresh fries, veggies, and garlic sauce if desired. Enjoy!
