A delicious and filling meal does not always have to be complicated! With this potato casserole with minced meat and curry sauce, you’ll have a tasty dish on the table in no time. A tasty option for an easy meal you’re sure to enjoy!

Instructions

Peel and slice the potatoes.

Heat the olive oil in a skillet over medium-high heat. Add the potato slices, garlic powder, onion powder and black pepper. Crumble the beef stock cube over the skillet and add the water. Cook, covered, for 20-25 minutes. Do stir in between. Add the dried chives and mix well.

Continue in another skillet and heat the olive oil over medium-high heat. Add the yellow onion, tomato, parsley and carrot. Bake 4 minutes. Add the minced meat, curry powder, garlic powder, cayenne pepper, black pepper, onion powder and the salt. Bake for 6-7 minutes.

Add the water, coconut milk and strained tomato sauce. Cook for 5-6 minutes or until sauce has thickened.

At the end, add the soy sauce manis to the mince mixture and mix well.

Spread the potato slices on a baking pan with the meatloaf mixture on top and sprinkle with grated cheese.

Place the potato slices with minced meat in a preheated oven at 200 ℃. Bake for 10-15 minutes.
