Bring the 25 ml of heavy cream almost to a boil. Add the pieces of white chocolate and let sit for 1 minute. Stir until smooth. Allow the ganache to cool completely.
Place the white chocolate ganache in a deep bowl. Add the mascarpone, whipping cream stabilizer, granulated sugar, and vanilla sugar. Mix for 1 minute. Gradually add the 250 ml of heavy cream while mixing. Continue until stiff.
Cut the strawberries into small pieces. Place one-third of the cream in a separate bowl and add the strawberry pieces. Mix well until combined.
Put the plain cream into a piping bag with a nozzle. Put the strawberry cream into another piping bag.
Take a magdalena and pipe a layer of strawberry cream on top. Place another magdalena on top of the first, pressing gently so the strawberry cream sits between the two.
Pipe dollops of plain cream on top of the magdalenas. Garnish with slices of strawberry.
