Tips
Rinse the green lentils under cold water before adding them to the recipe.
Ensure the meatballs are evenly shaped.
Taste the soup during cooking and adjust the seasoning as needed.
For this recipe, I used our own ras el hanout blend.
Stappenplan
Heat the olive oil in a pan over medium heat. Add the yellow onion, carrot, zucchini, tomato, ras el hanout, cumin powder, curry powder, bay leaves, garlic powder, and salt. Crumble the beef stock cube into the pan and mix well. Add the water.
Stir in the green lentils and bring the mixture to a boil over high heat. Once it starts simmering, reduce the heat to low. Cover and cook for 45 minutes.
Meanwhile, prepare the meatballs. In a bowl, combine the ground beef with ras el hanout, salad seasoning, and salt. Mix well, then form the mixture into meatballs.
Add the meatballs and chopped parsley to the soup. Cover and cook for an additional 25 minutes.
