Tips
Check the freshness of your yeast by dissolving it in lukewarm water with a bit of sugar. If it foams, it’s active and ready to use.
Always use lukewarm water to activate yeast; too hot will kill it, too cold will slow it down.
Knead thoroughly for 10–12 minutes to develop gluten and improve the dough’s texture.
Let the dough rise in a warm spot until doubled for the best structure.
Cover the dough while rising with plastic wrap or a damp towel to prevent it from drying out.
Watch the buns closely in the oven—golden brown is perfect, but don’t overbake or they may dry out.
Use parchment paper to avoid sticking and make cleanup easier.
Customize your tuna and chicken salads with extra spices or veggies to suit your taste.
You can prep the salads a day in advance for convenience.
Stappenplan
Put the flour in a large bowl. Add the yeast, sugar, Italian seasoning, salt, sunflower oil, Greek yogurt, and lukewarm water. Mix well and knead for 10–12 minutes.
Cover the dough and let it rise in a warm spot for 1 hour or until it has doubled in size.
In a bowl, mix the tomato paste with the water and Italian seasoning.
Divide the dough into 32 equal pieces (26/27 grams each) and shape them into balls.
Take a ball of dough and roll it out into a circle (about 9 cm). Repeat the process.
Place the dough on a baking tray lined with parchment paper. Spread a thin layer of tomato sauce on it and place another piece of dough on top. Again, spread tomato sauce and garnish with grated cheese, red onion, olives, and bell pepper (you can customize the toppings as you like).
Let the dough rise for another 30 minutes in a warm place until doubled in size.
Bake the pizza bread in a preheated oven at 200°C (390°F) for 10 – 15 minutes, or until golden brown. Once out of the oven, immediately cover the bread with a tea towel to keep them soft.
TUNA SALAD
Peel and finely chop the red onion.
Place the canned tuna in a large bowl. Add the red onion, mayonnaise, chili sauce, and sambal. Mix well.
Peel and finely chop the red onion. Finely chop the arugula.
Place the shredded chicken in a bowl. Add the mayonnaise and herb cream cheese and mix well. Add the onion, arugula, salt, salad seasoning, and black pepper. Mix until combined.
Fill the bread with the tuna- and chicken salad.
