Tips
If the sauce is too thin, let it simmer a bit longer to thicken.
While dried parsley works well, you can substitute fresh parsley or dill.
Serve with a lemon wedge for a refreshing kick.
Add a side of steamed vegetables, such as broccoli or green beans.
Adjust salt and pepper to taste.
Stappenplan
Peel and cut the potatoes into equal-sized pieces. Place them in a pot of water and boil for 15–20 minutes until soft. Check with a fork to ensure they are tender. Drain the water.
Transfer the potatoes to a large bowl. Add the heavy cream, butter, salt, and black pepper. Mash or whip the potatoes until smooth. Set aside.
Heat the butter and olive oil in a skillet over medium heat. Add the shrimp and cook for 2–3 minutes. Add the salt, cayenne powder, onion powder, garlic powder, curry powder, and black pepper. Mix well. Pour in the heavy cream and let the sauce simmer for 5–6 minutes until it thickens.
Remove the pan from the heat and stir in the dried parsley. Mix thoroughly.
Divide the mashed potatoes among plates. Spoon the shrimp and sauce over the potatoes. Serve immediately.
