Cut the potatoes evenly: This prevents some pieces from being too soft or too firm.
Let the spices infuse: If you have time, marinate the potatoes with the spices for about 30 minutes before cooking. This adds extra flavor.
Soak the skewers: If using wooden skewers, soak them in water for 30 minutes. This prevents them from burning in the pan.
Chill the meat mixture: Let the meat mixture chill in the fridge for 15-20 minutes before forming the skewers. This makes it firmer and easier to shape, and helps the flavors infuse better.
Moisturize your hands: Lightly dampen your hands with water or oil before shaping the chicken mixture around the skewers to prevent it from sticking.
Baking in the oven? You can also bake the skewers in the oven. Bake them at 200°C (top and bottom heat) for about 20 minutes, turning them halfway through.

Peel the potatoes and cut them into pieces.
Heat the olive oil in a pan over medium heat. Add the potatoes, salt, ras el hanout, cayenne powder, garlic powder, cumin powder, and finely chopped parsley. Mix well. Add the boiled water and bring to a boil over high heat. Once it starts bubbling, reduce the heat and let the potatoes simmer for 22-28 minutes, or until tender. Check with a fork to ensure they are cooked.
Peel the carrot and roughly chop it. Peel and roughly chop the red onion. Put the carrot, red onion, and parsley into a food processor and pulse until coarsely chopped (not too fine).
Put the ground chicken in a deep bowl. Add the vegetable mixture, salt, ras el hanout, cumin powder, cayenne powder, garlic powder, breadcrumbs, and olive oil. Mix until combined.
Take a skewer and form about 70 grams of the chicken mixture into an elongated shape around the skewer. Repeat with the rest of the mixture.
Heat some oil in a frying pan over medium heat. Cook the chicken skewers for about 6-7 minutes on each side, until cooked through.
