Add the fine semolina, flour, yeast, sugar, salt, olive oil, and lukewarm water to a large bowl. Mix well and knead for 10-12 minutes until smooth.
Cover the dough and let it rise in a warm place for 1 hour or until it doubles in size.
In another bowl, add the grated cheese, yellow onion, parsley, and ras el hanout. Mix well and set aside.
Deflate the dough and divide it into 9 equal pieces. Shape into balls.
Roll each ball out with a rolling pin into a sheet measuring 17 x 20 cm (7 x 8 inches).
Melt the butter and brush it over the dough. Sprinkle some of the cheese mixture on top.
Tuck the dough into a tidy bundle.
Place the dough bundles on a baking tray lined with parchment paper. Brush with beaten egg and sprinkle with more of the cheese mixture.
Let the dough bundles rise in a warm place for 30 minutes or until doubled in size.
Preheat the oven to 200°C (390°F). Bake the bread for 12-18 minutes, or until golden brown. Keep an eye on the baking time as every oven varies. Cover the bread with a clean tea towel immediately after baking to keep it soft.
Heat the olive oil in a frying pan over medium heat. Add the ras el hanout, cayenne pepper, garlic powder, onion powder, chives, and salt. Cook for 4-5 minutes. Stir in the mayonnaise, sweet chili sauce, and sambal. Mix well. Add the red onion and olives and cook for 1 minute. Remove from the heat and add the cheddar slices or another cheese of your choice.
Fill the bread with the sauce, chicken mixture, fresh fries, fresh veggies, and any sauce of your choice. Enjoy!
