Tips
Use lukewarm water (around 37 °C). This helps activate the yeast better. Water that’s too hot can kill the yeast.
Let the meat mixture cool completely before adding it to the dough.
Want extra crunch? Add some breadcrumbs to the cheese mixture for a crunchier bite.
Place a small dish of hot water at the bottom of the oven. This helps create a soft inside and crispy exterior.
Feel free to add your favorite cheese!
Stappenplan
Place the flour and yeast in a bowl and mix well. Add the salt, sunflower oil, honey, and lukewarm water. Knead for 10-12 minutes until smooth. Cover and let the dough rise for 1 hour, or until doubled in size.
Heat the olive oil in a frying pan over medium heat. Add the ground beed, salt, ras el hanout, cumin powder, cayenne powder, onion powder, and garlic powder. Cook for 4 minutes.
Add the finely chopped onion, chopped carrot, zucchini, bell pepper, and sliced olives. Cook for another 5 minutes.
Remove the pan from the heat and add the grated mozzarella. Mix well and let cool.
In a bowl, mix the Parmesan cheese, dried parsley, cayenne powder, black pepper, and onion powder. Set aside.
Deflate the dough and divide it into 9 equal pieces of about 80 g. Shape into balls.
Roll out one ball on a floured surface into a square of 15 cm.
Place a slice of young cheese on top, followed by 100 g of the meat mixture and some grated mozzarella.
Fold the top of the dough over the filling, fold the bottom up, and then fold the sides inward. Flip the package over.
Brush with milk and dip one side into the cheese mixture for a crispy exterior. Place on a baking sheet that’s lined with parchment paper.
Let the dough rise for 30 minutes, or until doubled in size
Bake the buns in a preheated oven at 200°C for 12-18 minutes until golden brown.
