Start by peeling and grating the apples. Next, heat the butter in a frying pan over medium-high heat. Add the grated apple, brown caster sugar, vanilla sugar and cinnamon powder. Bake this mixture for 5-7 minutes, until the apples are well softened. Remove the skillet from the heat and add the caramel. Mix everything well and allow to cool.
In a deep bowl combine the mascarpone with the sugar, vanilla sugar and whisk fix. Blend 1 minute. Now add the unbeaten whipping cream little by little until the cream forms firm peaks. Place the bowl with the mixture in the refrigerator to set it aside for a while.
Take another bowl and in it mix the milk with the cinnamon powder. Dip the long fingers one by one through the mixture, then place them in the bottom of an oven dish or baking pan.
Spread a layer of the previously prepared cream over the long fingers. Then add half of the apple mixture and divide evenly. Repeat these steps with another layer of long fingers, apple mixture and finish with a top layer of cream (keep a little cream aside for garnish). Place the apple dessert, covered, in the refrigerator and let set for 4-5 hours or preferably overnight, so that the flavors mix well and the dessert becomes nice and smooth.
For the finishing touch, garnish the apple dessert with dashes of caramel and pipe a dollop of cream on top.
