This easy cookie recipe requires no oven—just simple ingredients like Maria biscuits, pistachio paste, and melted chocolate. Tips
I used a 28×18 cm springform pan for this.
Stappenplan
Bring the heavy cream almost to a boil in a saucepan. Add the broken pieces of white chocolate and let sit for 1 minute. Then stir until smooth.
Grind the Maria biscuits in a food processor until finely crushed.
Use the food processor to coarsely chop the pistachios.
Take a large bowl and add the finely ground Maria biscuits, chopped pistachios, pistachio paste, and the white chocolate ganache. Mix until smooth.
Spread the cookie dough into a springform pan lined with parchment paper. Press it down firmly. Cover and refrigerate the cookie dough until firm.
Cut the cookie dough into rectangles or your desired shape.
Melt the white chocolate using a bain-marie. Add the pistachio paste and chopped pistachios. Stir well.
Dip each pistachio cookie into the chocolate-pistachio mixture one by one.
Place the pistachio cookies on a sheet of parchment paper. Garnish with ground pistachios and rose petals.
