Stappenplan
Place the chicken breast in a pot with half-filled water and some salt, and cook for 20 minutes or until the chicken is fully cooked. Drain the water and let the chicken cool. Shred the meat.
Peel and finely chop the yellow onion. Dice the red bell pepper into small cubes.
Heat the olive oil in a skillet over medium heat. Add the chopped onion and red pepper cubes. Sauté for 3–4 minutes.
Add the tomato paste, chicken seasoning, cumin, paprika, onion powder, garlic powder, cinnamon, and water. Mix well and let it simmer for 5–7 minutes.
Add the shredded chicken and cook for another 2 minutes. Remove the pan from the heat and stir in the grated cheese. Mix until combined.
Combine the tomato paste and water in a bowl and mix until smooth.
Take a wrap and spread it fully with the tomato sauce.
Add a portion of the chicken filling and roll the wrap tightly. Repeat the process with the remaining wraps.
Place the taquitos on a baking tray lined with parchment paper and brush the tops with tomato sauce.
Bake the taquitos in a preheated oven at 200 °C (390 °F) for 7–10 minutes or until the edges are nicely golden brown.
Serve the taquitos with various sauces for extra flavor!
