Ensure the water is lukewarm (about 35-40°C); hot water can kill the yeast, while cold water slows rising.
Knead the dough long enough to achieve light, fluffy rolls. You can also use a stand mixer.
Choose a warm, draft-free spot for dough rising. If none is available, preheat the oven to its lowest setting (30-40°C), turn it off, and let the dough rise inside. Alternatively, fill a pan with warm water, place a tray over it, and put the dough on top.
Lightly press the nori and sesame seeds after brushing with egg so they stick and bake without falling off.
For a crunchier crust, place a small dish of water at the bottom of the oven while baking. This adds light steam, resulting in a crispy outside and soft inside.
Samurai sauce can be spicy; adjust the amount to taste, especially if serving guests who prefer mild flavors (or replace it with another sauce if desired).

Place the flour, yeast, salt, honey, vinegar, sunflower oil, and lukewarm water in a large bowl. Mix well and knead the dough for 10-12 minutes. Cover the dough and let it rise in a warm spot for 1 hour or until it doubles in size.
Dust your work surface with flour and roll out the dough into a rectangular sheet.
Cut the dough vertically in half and fold each piece inward. Then, cut into 8 equal pieces.
Place the pieces of dough on a baking sheet lined with parchment paper. Brush with the beaten egg, add pieces of nori on top, and sprinkle with sesame seeds.
Let the dough rise for another 30 minutes in a warm place or until it doubles in size.
Preheat the oven to 200°C (392°F). Bake the sushi rolls for 15-18 minutes until golden brown. Keep an eye on the baking time, as this may vary for each oven.
For the tuna salad, mix the tuna, pickles, red onion, mayonnaise, and samurai sauce in a large bowl.
Slice a bread roll in half and layer with a bit of mayonnaise, lettuce, nori, samurai sauce, tuna salad, fried onions, avocado, extra samurai sauce, and sesame seeds.
