Tips
Make sure the water is lukewarm (around 30-35°C). If it’s too hot, it can kill the yeast, and if it’s too cold, it may lengthen the time for rising.
Rising time may vary depending on room temperature. If your kitchen is cold, you can let the dough rise in a slightly warmed (but turned off) oven with a small bowl of hot water inside.
Grating Parmesan yourself will give a more intense flavor, and it melts better.
Marinate the chicken in the spices and oil 20-30 minutes beforehand, or even overnight, to let the flavors really sink in.
Serve the rolls warm or cold with the chicken mixture, or for an extra touch, grill them briefly with a slice of cheese before adding the chicken for a delicious melted effect.
You can substitute chicken breast with chicken thighs.
Stappenplan
Place the flour, salt, honey, yeast, sunflower oil, yogurt, and lukewarm water in a large bowl. Mix well and knead the dough for 10-12 minutes until smooth. Cover the bowl and let the dough rise in a warm spot for 1 hour, or until it has doubled in size.
In a separate bowl, mix the finely grated Parmesan cheese, cayenne pepper powder, garlic powder, onion powder, and dried parsley. Set aside.
Press the air out of the dough and place it on a floured work surface. Roll the dough out into a rectangular shape and divide it into 12 equal pieces.
Lightly brush each piece of dough with milk.
Next, coat the dough with the Parmesan mixture. Place on a baking sheet lined with parchment paper.
Let the dough rise for another 30 minutes, or until they've doubled in size.
Meanwhile, heat olive oil in a pan over medium heat. Add the chicken, salt, garlic powder, onion powder, and cayenne pepper powder. Cook the chicken for 5-6 minutes until done.
In a bowl, mix the chopped pickles, diced red onion, mayonnaise, crème fraîche, and mustard. Add the cooked chicken and mix well.
Place in a preheated oven at 200°C (390°F). Bake for 8-15 minutes, or until golden brown. Keep an eye on the baking time, as ovens can vary.
Remove from the oven and let the bread cool slightly before serving with the chicken mixture.
