Dice the potatoes. Bring the potato cubes to a boil in water with some salt for 15 to 20 minutes.
Chop the bell bell pepper, onion, garlic, mushrooms and broccoli small.
Heat some olive oil in a saucepan and add the vegetables, curry spices, onion powder, black pepper, garlic powder and mustard powder. Bake for about 5 to 7 minutes. Add the cubed chicken broth, herb cream cheese, crème fraîche and coconut milk. Cook this until it bubbles well.
Mash/mash the potatoes. Add the onion powder, garlic powder, herb cream cheese, grated cheese and black pepper. Mash everything to a fine consistency. Now add the vegetable mixture and mix everything until combined.
Spread the potato mixture evenly over the dish. Top it off with some grated cheese, tomato, broccoli and some bruschetta herbs. Place in a preheated oven at 250 degrees for about 10 to 15 minutes or until the cheese is completely melted.
