Break the eggs over the blender. Add the sugar, vanilla sugar, salt, milk and flour. Mix well. Mix for 1 minute until batter is smooth.
Heat a skillet or pancake pan over medium-high heat and add a little sunflower oil to grease the pan. Pour a scoop of batter into the pan (30 g per pancake) and rotate the pan so that the batter is evenly distributed across the pan. Bake until the edges begin to solidify. Carefully flip the pancake with a spatula and fry the other side until golden brown.
Repeat the process with the rest of the batter until all the pancakes are baked.
Serve the pancakes hot with syrup, sugar, fruit, or other toppings of your choice.
