15 g honey
7 g yeast 1 tbsp
1 egg (m)
20 ml olive oil
500 g flour all-purpose flour
8 g salt 1⅓ tsp
50 g herb butter
GARNISH
herb butter molten
Parmesan cheese grated
CHICKEN MIXTURE
700 g chicken breast
5 g salt ⅚ tsp
3 g cayenne powder 1 tsp
3 g garlic powder 1 tsp
3 g onion powder 1 tsp
1.5 g black pepper powder ½ tsp
20 ml olive oil
SAUCE
100 g mayonnaise
75 g hot chili sauce
20 g sambal oelek
15 g sweet soy sauce
Tips

Ensure the milk is warm, not too hot, as it may kill the yeast. The beaten egg and butter should also be at room temperature for better mixing into the dough.

Knead the dough well until it becomes smooth and elastic.

For an extra rich flavor, brush the rolls with a little melted herb butter immediately after baking for a delicious aroma and taste.

Marinate the chicken for at least 30 minutes, or overnight if possible, to let the spices infuse the chicken.

Want a milder sauce? Use less sambal or replace the hot chili sauce with sweet chili sauce. For a spicier sauce, add more sambal or a bit of sriracha.

In a deep bowl, add the warm milk, honey, and yeast. Mix well and let the mixture rest for 5 minutes to activate the yeast.

Add the beaten egg and mix well. Then add the olive oil, flour, and salt. Knead until smooth.

Add the herb butter and knead for another minute. Cover the dough and let it rise for 1 hour, or until doubled in size.

Deflate the dough. Roll the dough into a rectangle of 44 x 39 cm (17 x 15 inches) on a floured surface

Fold the top part of the dough toward the center, then fold the bottom part over the top, creating a three-layered rectangle.

Use a rolling pin to flatten the folded dough slightly, without pressing the layers completely together.

Cut the dough into 8 equal strips.

Lightly roll each strip with a rolling pin to elongate it. Place the strips of dough on a baking sheet lined with parchment paper, leaving enough space between them.

Brush the top of the dough with melted herb butter. Sprinkle with Parmesan cheese and make a slash in the dough. Let the dough rise for 30 minutes, or until doubled in size.

Bake the bread in a preheated oven at 200°C (390°F) for 12-18 minutes until golden brown.

Wash and cut the chicken into small cubes. Place the chicken in a bowl and add the salt, cayenne powder, garlic powder, onion powder, black pepper, and olive oil. Mix well.

Heat a skillet over medium heat. Add the chicken and cook for 6-7 minutes until cooked through.

In a deep bowl, mix the mayonnaise, hot chili sauce, sambal oelek, and sweet soy sauce until smooth. Add the cooked chicken and mix well.

Fill the bread with lettuce (optional), the chicken mixture, and sauce to taste. Serve immediately and enjoy!
